Marvelous Pancakes

To make some marvelous pancakes with Ben’s Muffin Mix you will need:

  • 1 egg
  • 2 Tbsp olive oil or melted coconut oil
  • 1/4 cup yogurt*
  • 1/2 to 3/4 cup almond milk
  • 1/2 cup Muffin Mix

*For buttermilk tang, for dairy-free substitute with extra almond milk and 1 tsp apple cider vinegar

Baked Blueberry Pecan

  • 5 servings dry mix = 1 and 2/3 cup
  • 1 cup frozen blueberries
  • 1 cup loosely chopped pecans
  • 4 eggs
  • 8 oz. apple butter
  • 1 cup water
  • 2 ripe bananas
  1. Take ripe bananas, knead, peel, mash in a bowl
  2. Add dry mix, eggs, water, blueberries and pecans
  3. Mix energetically until batter is smooth (you can do it!)
  4. Pour batter into lightly greased/oiled muffin ramekin
  5. Bake at 325F for 25 min

Caution: Ramekin tray will be hot after baking.

Muffins should be moist and spongy with a crust on top. Allow to cool for 5 minutes. Enjoy!

Baked Chocolate Chip Walnut

Great for planning the week with a healthy treat. Makes about 12 standard size muffins;  quadruple the single serve quantities.

  • 4 servings dry mix = 1 and 1/3 cup
  • 1/2 cup chocolate chips (or 1/3 cup, up to you)
  • 1/3 cup chopped walnuts
  • 4 egg
  • 4 ripe bananas
  1. Take ripe bananas, knead, peel, mash in a bowl
  2. Add 4 servings of dry mix, 4 egg, chocolate chips, and chopped walnuts
  3. Mix energetically until batter is smooth (you can do it!)
  4. Pour batter into lightly greased/oiled muffin ramekin
  5. Bake at 425F for 10 min (+/- 5 min based on power level)

Caution: Ramekin tray will be hot after baking.

Muffins should be moist and spongy with a crust on top. Allow to cool for 5 minutes. Enjoy!

Quick Chocolate Chip Delight

  • 1 serving dry mix = 1/3 cup
  • 1/4 cup chocolate chips
  • 1 egg
  • 1 ripe banana
  1. Take a ripe banana, knead it, peel it, mash it in a microwaveable mug or bowl
  2. Add pouch of dry mix, an egg, and chocolate chips
  3. Mix energetically until batter is smooth (you can do it!)
  4. Microwave for 3-4 minutes at high power

Caution: Bowl will be hot after cooking.

Muffins should be moist and spongy with a crust on top. Allow to cool for 1-2 minutes. Enjoy!

Baked Chocolate Chip & Peanut Butter

  • 1 bag original mix
  • 3 large eggs
  • 1/2 cup peanut butter
  • 1/2 cup almond milk
  • 1/4 tspn. vanilla extract
  • Pinch salt
  • 2 tbsp. granulated stevia
  • 1/2 tspn. cinnamon
  • 1/2 cup dark chocolate chips
  • 1 ripe banana

 

Mixed the wet ingredients and dry ingredients separately, then combined them and baked them in muffin tins at 350F for 12 minutes. Makes 11 muffins.

  • 1 serving dry mix = 1/3 cup
  • 1 egg
  • 1 ripe banana
  1. Take a ripe banana, knead it, peel it, mash it in a microwaveable mug or bowl
  2. Add pouch of dry mix, an egg
  3. Mix energetically until batter is smooth (you can do it!)
  4. Microwave for 3-4 minutes at high power
